Soft Peanut Butter Cookie Recipe

Ingredients:

3/4 cup margarine
3/4 cup sugar
3/4 cup brown sugar
1 egg
3/4 cup peanut butter
1 teaspoon vanilla
1-3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar (for rolling)

Directions:

Preheat oven to 350F.

In medium mixing bowl cream together margarine, sugar and brown sugar. Blend in egg, peanut butter and vanilla.

Separately, sift dry ingredients together, then add to creamed mixture. Mix well. Pour granulated sugar onto plate. Shape dough into balls and roll in sugar to coat.

Place on ungreased cookie sheets and bake 10-12 minutes.

Yield: About 36 cookies.
